Good Fall Dinner-Chicken Chili Stew

Fall is in the air and as I usually do, I start to think warm food, and, that’s easy to make and serve. What better then a chili or a stew? Last week when I was in Palm Springs, my friend Eileen made what I call a Chicken Chili Stew, the best of both. Delicious, filling and most of all easy. A one pot, one dish meal! Last night I made it for the first time for my family…it was a hit!

Here’s the recipe: (PS, I usually use an outline and adjust with what I have in the house, or adjust spices according to my guests. I hope you do the same!) Saute:

  • 3 large peppers, I use all three colors for interest
  • 2 onions
  • garlic-usually the whole head
  • celery
  • leaks
  • carrots
  • 2T oregano
Saute in olive oil and add 2 small cans of tomato paste to thicken. While you are doing this, brown 8 boneless pieces of chicken (I use thighs because I like the flavor of dark meat) and 4 adelle chicken sausages.
Add:
  • 2 small jars of jalapenos (or fresh)
  • 2 par boiled sweet potatoes
  • 4 – 6 cans of black beans
  • 1 can of corn
  • 1 can of creamed corn (to help thicken as well)
  • 2 diced tomatoes
  • the cut up chicken and sausage
  • 2 1/2 T Chili Powder
  • 2 1/2 T Cumin
  • 2 1/2 T Corriander
  • Salt & Pepper to taste
If it becomes to thick you can add some beer or chicken stock to create a bit of liquid
You then slow cook all day. Because of all the sauteing and pre cooking I do not use a crock pot for this, but rather just stove top.
Garnish with chopped cilantro, perhaps a bit of cheese and serve with crusty whole grain bread or corn bread! And voila…you have a warm and easy meal for many, or left overs to freeze for the next few weeks!
