Fall is in the air and as I usually do, I start to think warm food, and, that’s easy to make and serve. What better then a chili or a stew? Last week when I was in Palm Springs, my friend Eileen made what I call a Chicken Chili Stew, the best of both. Delicious, filling and most of all easy. A one pot, one dish meal! Last night I made it for the first time for my family…it was a hit!
Here’s the recipe: (PS, I usually use an outline and adjust with what I have in the house, or adjust spices according to my guests. I hope you do the same!) Saute:
- 3 large peppers, I use all three colors for interest
- 2 onions
- garlic-usually the whole head
- celery
- leaks
- carrots
- 2T oregano
- 2 small jars of jalapenos (or fresh)
- 2 par boiled sweet potatoes
- 4 – 6 cans of black beans
- 1 can of corn
- 1 can of creamed corn (to help thicken as well)
- 2 diced tomatoes
- the cut up chicken and sausage
- 2 1/2 T Chili Powder
- 2 1/2 T Cumin
- 2 1/2 T Corriander
- Salt & Pepper to taste
