Cranberry Relish for Thanksgiving!

While most of my family seems to like the stuffing, mashed potatoes and gravy part of the Thanksgiving meal, I am more of a Turkey and relish sort. Which all works out great as there is more for me. My favorite turkey relish is a cranberry-manderine orange recipe I got years ago from my friend Hollis, back in my Chicago days. To this day, when ever I make it, everyone loves it!

My recipe is as follows:

  • 1 lb. fresh cranberries
  • 1 1/2 C. of Sugar
  • 2 small cans of mandarine oranges
  • 1 C. red or black current preserves
  • 1 C. water
  • 1 C. chopped walnuts
  • 2 T. orange peel (I use the rest of the whole orange in the cavity of the turkey for a hint of flavor)

Mix everything together in a pot, except the walnuts, orange peel and mandarine oranges.

Bring to a boil and then lower and simmer for 20 minutes, uncovered. Scrape off any foam. Add walnuts, orange peel and mandarine oranges. Refrigerate at least overnight in serving bowl. I sometimes make this up to two days before Thanksgiving Day.
